Four large counters present the excellent buffet breakfast offering a wide choice of cereals, juices, smoothies, charcuterie, cheeses, gravadlax, cooked fare, loose-leaf teas, chilled cava and so on; notes and labels hand-written on slates indicate the personal care that has gone into this. The spacious breakfast room, decorated with plants and photos of historic Bruges, later becomes part of the Black Swan Brasserie and Bar.
The hotel has recruited a talented young chef to run the restaurant, which serves a limited menu of select, seasonal dishes – not cheap, but astonishingly well executed; don’t be surprised to find non-hotel guests dining here. The friendly bar serves local beers (Brugse Zot on tap), wines and spirits, as well as light snacks, such as bruschette, and platters of cheese or charcuterie. For other choices of bars and restaurants you’ll have to go into town, but that’s not far away.
