After airing on BBC when it first came out last year, it’s now available to more fans. Mary Berry‘s Ultimate Christmas is now airing across the Atlantic. The 88-year-old cooking genius is whipping up all the Christmas essentials including gravy, stuffing, brussel sprouts, and canapes. It’s time to follow in the footsteps of a culinary legend and create our very own Christmassy pear and cherry trifle. So, here’s what you’ll need:
If you’re creating the festive dessert for young children, you can swap out the dry sherry for orange juice, per Mary’s Ultimate Christmas recipe. Or, if you don’t have sherry, brandy also works in this dish.

Former Great British Bake Off star Mary also adds caramel shards as a decoration atop her pear and cherry trifle.
To do this, begin by lining a baking tray with parchment paper, per the recipe on PBS’ website.
Then, Mary combines sugar and water in a saucepan and stirs over a low heat until you have a clear syrup. Boil until light golden in color – no stirring. Then once it’s golden, place the saucepan in a bowl of cold water for 2-3 seconds so it cools.
Next, dip a metal spoon into the caramel and quickly wave the spoon over the parchment paper to create thin caramel threads. Leave to set for 10 minutes. When the caramel has hardened, break into pieces. Then, you can arrange the pieces on top of the trifle.
